Flourless Cake - A protein recipe with a twist!

Happy New Year!

I am not dead, and though it was quite a year, I did make it through 2018 - albeit without one single post on this page. It feels kind of sad to admit, but 2018 was a very busy year of not too much fun kinds of cooking or baking, and the most notable things I made were just sort of impressive ways to combine all the random things I had in my pantry or freezer.

Which reminds me, I could have probably posted one of my two renditions of tamale casserole (in which I used up 4 leftover holiday tamales by chopping them up and combining them with riced broccoli, beans, turkey meat, enchilada sauce and cheese to make a somewhat healthier dish that still paid homage to the tamale) or shown you how the majority of my “meal prep” lately has consisted of frozen vegetables and precooked frozen chicken, thrown together with a few spices and possibly a bit of cheese (though not the most thrilling to look at, very easy and reasonably tasty.)

But honestly, the whole reason I have not been posting anything is just that I have been SO dang busy. And sometimes just really tired from being so busy.

However, also in 2018…

No-Bake Carob Brownie Bites

No-Bake Carob Brownie Bites

Even though I made the recipe up from scratch, somehow, I still couldn’t tell they weren’t chocolate.

Not chocolate?  Whoever heard of a brownie that wasn’t made with chocolate?  Not me, at least, until very recently, when I decided to try giving it up.  Not exactly my idea of fun!

Chocolate didn’t get the boot because of Lent, or because it’s inherently, sinfully, bad for me (like the mayor in one of my favorite movies, Chocolat would think,) but simply because it is a bean.  A seed, really.  But, for the sake of my wellbeing, that was enough of a reason.

However.  That was NOT enough of a reason not to have fudgey brownies.  We all got to have a little sanity, people, and this stuff does it for me!

While trying, as much as possible, to stick to the Autoimmune Protocol as I’m still unsure of the origins of my current inflammation issues, I’m opening up to trying even more ingredients than ever before!  It has been a tasty adventure so far, my friend.  (Check these AIP-friendly recipes out…)

Frozen Lemon Bars

Creamy Zucchini Detox Bisque

Matcha Green Tea Power Balls

So now I’ve been finding some thrilling uses for carob powder.  First step, carob powder, all-people-friendly, delicious brownies… next step, ruling the world?  Or maybe just another recipe using fun, new ingredients!

{Special call to click + comment today, friend!}

It’s summer.  It’s hot enough to melt your popsicle.  And it’s time to do something about it.

Inspired by the fact that I now use my porch in lieu of a microwave for defrosting things, I think there is an excellent chance that these insanely good-looking desserts will totally fly in (or out of) your kitchen.

Personally? I can’t wait to try #1 and #26… special mentions to – er – all of them!

My super supportive group of veggie-based chicas (and holla to the couple of chicos!) over at the Finding Vegan Facebook group has leapt to my call for healthy frozen desserts, so that I could wow you with their talents and save you, deliciously, from the heat.  Remember when they helped me with this other dessert roundup? Classic!

Matcha Green Tea Power Balls

Matcha Green Tea Power Balls

Let me just start off by saying that matcha green tea is one of God’s great gifts to humans.  As humans, we tend to be imperfect and, as a result, reliant on what resources we are given to thrive.  In our imperfection, though, we often seek out the stuff that provides us with instant gratification rather than long-term vitality.

(And, yes, I say this as I am eating cheese-flavored popcorn.  I’m just a weak human?)

But, in some cases, we can get that instant gratification (think caffeine boost) with benefits that can help clean up our act, health-wise (think antioxidants).

So before you write off matcha green tea as coffee’s less exquisitely caffeinated substitute – you’d never do that anyway, right? – let me give you a little 5-point profile of my latest fave, the powerful matcha...
